INTERNATIONAL SPICE BLENDS (No Salt-All Natural-No MSG-No Free Flowing Agents or Chemicals) CARDAMOM RUB (India) This rub is used primarily for poultry. Just shake it on when grilling or baking. It contains seven ingredients including Cardamom, Garlic and Ginger. QALAT DAQQA (Tunisia) This blend is used in the cooking of vegetable dishes and with lamb recipes. Grains of Paradise and Nutmeg are the anchor ingredients of this blend. This blend has been called the "Tunisian 5 Spice". ZAHTAR (Middle East) Roasted Sesame Seeds and Sumac are in this spice blend. Use this with meatloaf or meatballs and with vegetables. You may use this also as a marinade for olives. This is the only International Blend with some salt, approximately 1%. HUNAN SPICE BLEND (China) A very tasty rub from The Peoples Republic of China, it is named after China's largest province. Toasted Sesame Seeds, Cilantro and Ginger are a part of this blend. It is best with Pork, Lamb and Chicken recipes. HERBS DE PROVENCE (France) A ground mixture of Marjoram, Thyme, Savory, Basil, Rosemary, Lavender, Sage and Ground Fennel, it is just the right mixture for soups and stews. It is also used in the roasting of poultry and with vegetables. Works well with pork tenderloins. CHAR MASALA (Afghanistan) This spice consist of Black Cardamom (pods removed), Cinnimon, Cloves and Cumin. Use it to flavor rice dishes. Absolutely great! Black Cardamom is different than White and Green Cardamom. It is more spicy and has a smoke, nutty flavor. GREEK RUB (Greece) Greek Rub is used to flavor Greek salads and to sprinkle on steaks, pork, chicken and fish. Oregano, Garlic, Parsley, Vegetarian Beef Powder, and Nutmeg flavor this blend. Also use in Greek recipes. RAS-EL HANOUT (Morocco) This blend is well known for its complexity and combination of spices. Our blend is unique with combinations of Nutmeg, Turmeric, Lavender, Nigella, cubeb berry, and Galangal Root. It is used with vegetables, meat casseroles, pork and with duck. BAHRAT (Ancient Persia) This rub is used in tomato sauces. It goes well with Italian meals if you want that Mediterranean fusion flavor. It can be used with meatloaf, meatballs, kabobs, grilled meats, pilafs, with all meats and in vegetables. Paprika, Coriander, Cloves and Chili are in this rub. BERBERE (Ethiopia) A hot and spicy blend, Berbere is in the tradition of African spices. It contains 16 different ingredients including Cayenne, Cumin, Cloves, Fenugreek, Orange Peel, Ginger and African Bird Pepper (120,000 s.u.). Use in stews (wats) and as a coating for foods to be fried. Rub it on chicken for baking or grilling. DUKKA (Egypt) Pronounced "dah-ka", Dukka is a part of the Egyptian culture, and used widly in that country. Roasted Chick Peas, Roasted Sesame Seeds and dried Mint make up some of the ingredients. It is mainly used in Egypt as a dip for bread after dipping the bread in oil. It is also used to crust roasted lamb, chicken or fish. It can be mixed in bread dough before baking. ITALIAN SEASONING (Italy) This is a classic Italian mixture of Basil, Parsley, Oregano, Onion, Thyme, Garlic, Black Pepper, Sage and Ginger. Apply to salads, and Italian sauces, soups and food recipes. As with our other International Blends, it contains no salt. ADOBO (Mexico) Our Adobo is not the typical commercial blend. The typical commercial Adobo is all salt. Out blend has the exotic spices that are used in Mexico. They include, Garlic, Onion, Ancho Pepper, Bay Leaves, Cumin, Clove, Cinnamon, Vinegar, and Orange Peel Powder. Rub on chicken, fish or pork. Mix also with chili beans. THAI SPICE (Thailand) This blend contains 16 ingredients including Cinnamon, Onion, Tomato Powder, Lemon Grass and Kaffir Leaves. Rub on chicken or seafood. PANCH PHORON (Bangal/Bangladesh) Panch Phoron means the "tempering of 5 ingredients". This mixture contains Cumin Seeds, Fennel Seeds, Black Mustard Seeds, Nigelia Seeds, and Fenugreek Seeds. It is used in hot oil to perfume and flavor vegetables. It is also used to spice the ghee that is poured over a dish of lentils as it is served. Use it when panfrying potatoes. You can grind Panch Phoron to a mix and use as a toping for casseroles and with fish and chicken dishes. For a nutty flavor, heat seeds in a skillet for about 1 to 2 minutes then let cool then grind. KHMELI-SUNELI (Russia) Khmeli-Suneli is a mixture of serveral ingredients including Cassia, Fenugreek, Savory, marigold pedals, Tarragon, and Saffron. It is used in Georgian meals. Rub on beef, use in chicken stews and with soups. TOGARSHI (Japan) Used in sushi, and sashimi and noddle dishes. It will perk up fish, poultry and beef. It can be sauteed with spinach in Sesame Oil. Chili, Poppy Seeds, Nori, and Sesame Seeds are some of the ingredients in this mixture. SAUERBRATEN (German) This spice blend is great in Bavarian Seasoning recipes. It is used to roast turkey, bake or grill Chicken, Cornish Hens or racks of Lamb. A blend of 17 spices including mustard powder, juniper berries, cassia, dill, tellicherry pepper, coriander, vinegar powder and mace. This blend is true to its German ancestry. Rub on chicken or turkey when grilling or baking. |
